These Lemon Lavender Muffins are bright, citrusy, and just the right amount of sweet! The girls had so much fun testing out the zester and, of course, dipping the muffins into the glaze—because everything’s better with a little extra sweetness.


Not a scone person? No problem! These muffins are soft, fluffy, and the perfect way to bake with lavender. Give them a try!

 

INGREDIENTS

2 cups Treasured roots Lavender scone mix

Zest of one large lemon

2 tbsp lemon juice

3/4 cup milk or buttermilk

1/3 cup melted butter or neutral oil

1 egg

1 tsp vanilla extract

Optional glaze:

1/2 cup powdered sugar

1-2 tbsp lemon juice

1 tsp lavender buds

 

INSTRUCTIONS

  1. Preheat oven to 375 degrees. Line a muffin tin with liners or grease well.

  2. In a large bowl, whisk together the scone mix and lemon zest.

  3. In another bowl, whisk together the lemon juice, milk, melted butter, egg, and vanilla.

  4. Gently fold the wet ingredients into the dry mix until just combined - don’t overmix!

  5. Divide the batter evenly into muffin cups, filling about 3/4 full.

  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let muffins cool completely.

  8. For the glaze, whisk powdered sugar with lemon juice until smooth.

  9. Dip muffins into the glaze for extra lemony sweetness. Sprinkle with lavender buds, if desired.
